Brisbane



For something different this week, we're going to share a recipe with you 
for these oh-so-cute cupcake biccies!

Ingredients

125g butter, chopped
1 tsp vanilla essence
1/2 cup caster sugar
1 egg yolk
1 1/4 cups plain flour, sifted
extra flour for kneading

Method

Preheat the oven to 180 and line an oven tray with baking paper.  
Put the butter, vanilla and sugar in a small bowl of an electric mixer and beat until light and fluffy.
Add egg yolk and beat well.  
Add flour to the butter and egg mixture and stir with a wooden spoon until well combined.
Turn the mix out onto a lightly floured board and knead gently until the dough is smooth.  
Cover in plastic wrap and refrigerate for 20 mins.
Roll the dough out between 2 sheets of baking paper to 3mm thick.  
Cut out shapes using cutters.  Bake biccies for 15-20 mins.  
Remove from oven and stand on a wire rack to cool. 

Decorate

Ice biscuit with a layer of white icing, then pipe on the 'patty pan' using pink icing.
Finally sprinkle the top with sprinkles and 1/2 a glace cherry.

Perfect for a baby shower, children's party or hightea!
