Cook



Peanut Butter Hummus

  • 2 x 400g cans chickpeas
  • 1 garlic clove, peeled
  • 3–5 x 15ml tablespoons regular olive oil
  • 6 x 15ml tablespoons (90g) smooth peanut butter
  • 3 x 15ml tablespoons lemon juice, or more as needed
  • 2 teaspoons sea salt flakes or 1 teaspoon pouring salt, or to taste
  • 2 teaspoons ground cumin
  • 4–6 x 15ml tablespoons Greek yogurt
  • 2 x 15ml tablespoons peanuts, finely chopped, to serve (optional)
  • 1 teaspoon smoked paprika, to serve (optional)
  • bread sticks, mini pittas, crackers, tortilla chips, to serve (optional)
  1. Drain and rinse the chickpeas. Put the garlic clove, chickpeas, 3 tablespoons oil, peanut butter, lemon juice, salt and cumin into a food processor and blitz to a knobbly purée.
  2. Add 4 tablespoons of the Greek yogurt and process again; if the hummus is still very thick add another 1–2 tablespoons yogurt and the same of oil. (This will often depend on the chickpeas, as different sorts make the hummus thicker or not.)
  3. Taste for seasoning, adding more lemon juice and salt if you feel it needs it.
  4. On serving, mix the chopped peanuts with the paprika and sprinkle on top if you wish, and put an array of bits and pieces to eat with or dip in, as you see fit.

A basic, store-bought bookcase can become the stay-organized center for a child's entire school year with a few simple adjustments.

1. Convert the top half of a bookcase into a message and display center by covering the back surface with Homasote fiberboard wrapped in linen. Metal clips hold permission slips for school events and can also be used for artwork, family photographs, or pen-pal letters. Meanwhile, books can be held in place by a tension curtain rod.
2. Compartmentalized plastic trays, available at hardware stores, contain art and school supplies and can be carried to the desk when needed.
3. Finally, a safe step stool makes it easy to put everything back in place

  • Gingerbread Men

  • Melted butter, to grease
  • 125g butter, at room temperature
  • 100g (1/2 cup, firmly packed) brown sugar
  • 125ml (1/2 cup) golden syrup
  • 1 egg, separated
  • 375g (2 1/2 cups) plain flour
  • 1 tbs ground ginger
  • 1 tsp mixed spice
  • 1 tsp bicarbonate of soda
  • Plain flour, to dust
  • 150g (1 cup) pure icing sugar, sifted
  • 8-10 drops red liquid food colouring
  • 8-10 drops green liquid food colouring
  • Smarties, to decorate

  1. Preheat oven to 180°C. Brush 2 baking trays with melted butter to lightly grease.
  2. Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. Add the golden syrup and egg yolk and beat until combined. Stir in the flour, ginger, mixed spice and bicarbonate of soda. Turn onto a lightly floured surface and knead until smooth. Press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest.
  3. Meanwhile, place egg white in a clean, dry bowl. Use an electric beater to beat until soft peaks form. Gradually add icing sugar and beat until stiff peaks form. Divide icing among 3 bowls. Cover 1 bowl with plastic wrap and place in the fridge. Add red colouring to 1 bowl and stir until combined. Add green colouring to remaining bowl and stir until combined. Cover with plastic wrap and place in the fridge.
  4. Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Use a 9cm gingerbread man cutter to cut out shapes. Place on trays about 3cm apart. Repeat with any excess dough.
  5. Bake in oven for 10 minutes or until brown. Remove from oven. Transfer to a rack to cool.
  6. Place prepared icings in small plastic bags. Cut a small hole in a corner of each bag. Pipe icing over gingerbread men to decorate. Finish with Smarties.

Hobart we're back!

Baked Eggs in Tomatoes

4 large tomatoes
salt and pepper
1/2 cup corn kernels
4 large eggs
2 teaspoons chopped chives
1/4 cup grated parmesan cheese

Method

Heat oven to 180 degrees.  Line a cake tin or baking dish with baking paper.
With a serrated knife, cut the top 1cm from each tomato.  With a spoon or melon baller, gently remove seeds and inner membrane, being careful not to break the flesh.  Place the tomatoes int eh dish and season with salt and pepper.
Divide the corn among the tomatoes.  In a bowl, whisk the eggs and chives and season with slat and pepper.  Divide the egg mixture between the tomatoes and top with the cheese.  Bake until egg mixture is set (45 mins or so). 
 Serve warm.
