Easter Bunny Biscuits
200g soft butter
2 cups brown sugar
1 tsp vanilla
2 1/4 cups plain flour
1/2 cup cocoa
1 tsp baking powder
100g dark chocolate, melted
Preheat oven to 160 degrees (150 fan forced)
Place the butter, sugar and vanilla in a food processor and beat until light and creamy.
Add egg and beat.
Add the flour, baking powder, cocoa and chocolate and beat until a dough forms.
Wrap in plastic wrap and chill in the fridge for 30 mins.
Roll the dough out between 2 sheets of baking paperuntil 3mm thick.
Use a rabbit-shaped cutter to cut out the biscuits.
Place on trays lined with baking paper and bake for 6-8 mins or until cooked.
Ice with white icing or melted white chocolate and press into a tray of coconut.
Finish them off with some lovely ribbon bows around their necks!
