Orange Cake with Lemon Icing


125g soft butter
1 cup caster sugar
2 eggs
2 cups self raising flour
zest and juice of 2 oranges (need about 1 cup of juice)


Preheat the oven to 180 degrees, line and grease a cake tin.
Cream butter and sugar together until pale.  Beat in eggs - one at a time.  Add 1 cup of the flour, then 1/2 cup orange juice.  Mix in the rest of the flour and then the final amount of orange juice and the zest.
 Pop into tin and bake for 30-40 mins or until just cooked.
Cool on wire rack and then ice.

Lemon Icing

1 1/2-2 cups icing sugar
1 desertspoon soft butter
1 tablespoon lemon juice

Mix all together well and spread over cake.

Best served with a magazine to flip through, cuppa and children in another room!!
