Mini Mathilda's Bakes...


Scotch Pancakes

These little gems are best eaten NOT like pancakes with Maple syrup, 
but like toast with butter and jam!

Ingredients

1/2 tsp white wine vinegar
150ml milk
110g plain flour
1/2 tsp bicarb of soda
1 egg
1 tbsp vegetable oil
1 tbsp golden syrup

Method

Put the vinegar into the milk and set aside.  Place flour into bowl and add the bicarb. 
In another bowl add the egg, oil and then with the oily spoon measure the syrup
 in and whisk everything together.  Add the vinegar and milk then add the 
bowl of wet ingredients to the dry, whisking to a batter.  
Heat a frying pan with no oil.  Add 1 1/2 tbsp of batter to make each pancake 
and then when bubbles appear, flip them over until golden on both sides.

Perfect for morning of afternoon tea, when little friends come to play!

We're embracing springtime at Mathilda's today, so join us and keep the kids busy by making some pretty flowers - you can use lots of things on hand from the craft table...paddle pop sticks for stems, green cardboard leaves, patty pan flower heads button middles and then add some decorative cut-out flowers, cotton wool, glitter and stickers...the options are endless!

Mini Mathilda's Bakes...


Perfect for these warmer days...and you can get the kids involved by threading their own skewer!

Lamb, Tomato and Mint Kebabs

Ingredients


  • Olive oil
  • 500g boneless leg of lamb, trimmed of excess fat and cut into 1-inch pieces
  • 2 teaspoons finely grated lemon zest
  • Lemon wedges, for serving
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • Coarse salt and ground pepper
  • 1 punnet grape tomatoes
  • 12 fresh mint leaves

Method

  1. Heat BBQ to medium-high; clean and lightly oil hot plates. In a large bowl, combine lamb, lemon zest, coriander, and cinnamon; season with salt and pepper.
  2. Onto four skewers, thread lamb, tomatoes, and mint, beginning and ending with lamb. Grill kebabs, covered, until lamb is medium-rare, 5 to 6 minutes, turning occasionally. Serve with lemon wedges

Tissue Cherry-Blossom Tree

Gather some sticks from outside and let dry if need be.
Cut out 5cm squares of pink tissue paper, 
pinch tightly in the middle to create blooms and 
stick to the branches using PVA.  Display in a tall vase or jar.

Mini Mathilda's Bakes...


How cool is THIS giant biccie - you bake it in a frying pan 
and can be served in chunks with a glass of milk 
or go all out and cut into wedges while still warm and serve with icecream!

Frying Pan Biscuit

Ingredients


  • 2 cups plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup sugar
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups milk chocolate chips
Method
  1. Preheat oven to 180 degrees. In a medium bowl, whisk together flour, baking powder, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugars until mixture is light and fluffy, about 2 minutes. Add egg and vanilla; mix until they are fully incorporated. Add flour mixture, and beat until just combined.
    Stir in chocolate chips.
  2. Transfer dough to a 10-inch ovenproof frying pan, and press to flatten, covering bottom of pan. Bake until edges are brown and top is golden, 40 to 45 minutes. Don't overbake; it will continue to cook a few minutes out of the oven. Transfer to a wire rack to cool, 15 to 20 minutes. Cut into 8 wedges. Serve warm; top each wedge with a scoop of ice cream.

Mini Mathilda's Bakes...


Parmesan-Carrot Risotto

Ingredients


  • 2 cups reduced-salt chicken stock
  • 2 tablespoons butter
  • 1 medium red onion, finely chopped
  • 6 medium carrots, grated
  • Coarse salt and ground pepper
  • 1 1/4 cups long-grain white rice
  • 1/2 cup dry white wine
  • 1/4 cup grated Parmesan

Method
  1. In a saucepan, bring stock and 2 cups water to a bare simmer over medium.
  2. In a large saucepan, melt 1 tablespoon butter over medium. Add onion and carrots; season with salt and pepper. Cook, stirring occasionally, until softened, 5 to 7 minutes. Stir in rice. Add wine; cook, stirring, until absorbed, 1 to 2 minutes.
  3. Add 2 cups hot stock; simmer over medium-low, stirring frequently, until mostly absorbed, 10 to 12 minutes. Continue to add stock, 1 cup at a time, stirring occasionally, until absorbed before adding more. Cook until rice is creamy and just tender, about 20 minutes (you may not need all the stock).
  4. Remove risotto from heat. Stir in Parmesan and 1 tablespoon butter, and season with salt and pepper.

Cook



Thai Chicken and Noodle Salad

You can cook your own chicken breasts for this - 
or if running short on time, use a BBQ chicken :)

2 chicken breasts, sliced
1 packet rice noodles
Paul Newmans Asian dressing
2 carrots, sliced into ribbons using a vegie peeler
1 lebanese cucumber, halved lengthwise and thinly sliced crosswise
1/2 cup fresh corriander
1/4 cup frech mint
bean sprouts, chopped peanuts, crunchy noodles, chilli flakes and sliced spring onions to garnish

Method

Soak noodles in boiling water for 10 mins and then rinse under cold water, transfer to plates.
Place cooked chicken on top of noodles and top with carrots, cucumber and herbs.  Drizzle with dressing and sprinkle with garnishes!

Use fabric paint and a eraser to stamp with, after you've drawn up lines 
with a ruler and a washable fabric pen.
Once dry, iron to set the paint and then when at the beach or park,

Cook


Toffee Apple Muffins

Ingredients

  • 2 eggs, lightly beaten
  • 80g castor sugar
  • 240ml milk
  • 100g butter, melted
  • 300g plain flour
  • 2 tsp baking powder
  • ½ tsp salt
  • pinch cinnamon
  • 2 apples, peeled, cored, finely chopped
  • 200g shop-bought toffee pieces

    Method

    1. Preheat the oven to 190C and line a 12-hole muffin tin with paper cases.
    2. Mix the eggs, sugar, milk and melted butter in a large bowl. Sift the flour, baking powder, salt and cinnamon into the bowl. Stir well to combine.
    3. Add the chopped apple and lightly mix.
    4. Using half of the mixture, quarter-fill each of the muffin cases with the mixture and top with a few pieces of toffee. Cover with the remaining filling so the cases are half full.
    5. Bake for 30-35 minutes until well risen and golden. Transfer to a wire rack to cool. Serve warm or cold.

Blackboard Cupboard

A blackboard cupboard is a cheap and effective way to capture family creativity. Apply blackboard paint to storage units and you have an instant chalkboard for scribbles and pictures.  Paint a whole cupboard or just sections of it, depending on aesthetics and requirements.

You'll need:

A storage unit; White knight chalkboard paint (can or aerosol), from Bunnings Warehouse; 
primer; sandpaper; paintbrush or roller; mineral turpentine.

Make:

Clean the surface of the wood or metal and sand smooth. You may need to prime the surface; if you are unsure, ask at your hardware store and apply primer as per instructions, if necessary. Stir the paint for at least five minutes before use (and do so periodically during the painting process). With a brush or roller, apply the first coat, using turps to mop up any mistakes. Allow to dry for 16 hours (paint) or two hours (aerosol) before applying a second coat. Leave for at least 24 hours before using.
