Cook



What a perfect time of year to enjoy my favourite favourite cake....
spicey layers with rich hazelnut cream....
nice to warm up with a hot drink.

Hazelnut Spice Cake

Ingredients
6 oz butter, 8 oz castor sugar, 3 eggs separated, pinch salt, 1 tsp grated lemon rind,
1 tbsp lemon juice, 2 1/2 cups SR flour, 3 tbsp milk, 3 tbsp boiling water.

Spice Layers
1 tsp cinnamon, 1 tsp mixed spice, 1 tbsp cocoa, 2 tbsp sugar.

Method
Cream butter and sugar, beat in egg yolks. Add salt, lemon rind and juice.
Gradually add flour alternately with milk, blend well. Lightly stir in boiling water then fold in stiffly beaten egg whites. Mix spice layer ingredients together. Spread 1/3 of the cake batter in a greased 8-9" tin, then sprinkle over 1/2 spice mix, add another 1/3 batter then sprinkle over the other 1/2 spice mix. Cover with remaining batter. Bake in very moderate oven for approx 90 mins. Stand 5 mins before turning out. Cool. Spread top and sides with Hazelnut Cream.

Hazelnut Cream
4 oz butter, 2 tsp cinnamon, 2 cups sifted icing sugar, 1 tbsp lemon juice,
1/4 cup chopped or ground hazelnuts. Whole hazelnuts to decorate.

Cream butter and cinnamon, add lemon juice alternately with
icing sugar then fold in chopped hazelnuts.
All that's left is to slice and enjoy!!

Cook


Comfort food at its best...Shepherd's Pie

  • 2 tbs olive oil
  • 1 x 2kg lamb leg, excess fat trimmed, cut into 3cm pieces
  • 4 large celery sticks, ends trimmed, coarsely chopped
  • 4 large carrots, peeled, coarsely chopped
  • 1 large brown onion, coarsely chopped
  • 2 garlic cloves, crushed
  • 40g (1/4 cup) plain flour
  • 750ml (3 cups) beef stock
  • 95g (1/3 cup) tomato paste
  • 2 tbs Worcestershire sauce
  • 2 dried bay leaves
  • 1kg desiree potatoes, peeled, coarsely chopped
  • 80ml (1/3 cup) milk
  • 40g (1/2 cup) shredded parmesan
  • 2 tbs dried (packaged) breadcrumbs

  1. Preheat oven to 180°C. Heat half the oil in a large non-stick frying pan over high heat. Add one-third of the lamb and cook, turning, for 3-4 minutes or until browned. Transfer to a plate. Repeat, in 2 more batches, with the remaining lamb, reheating the pan between batches.
  2. Heat the remaining oil in the pan over medium heat. Add the celery, carrot, onion and garlic and cook, stirring, for 5 minutes or until the onion is soft. Add the flour and cook, stirring, for 30 seconds. Add the lamb, beef stock, tomato paste, Worcestershire sauce and bay leaves. Season with salt and pepper. Bring to the boil. Transfer to a 2.5L (10-cup) capacity ovenproof dish. Cover and bake for 1 1/2 hours. Uncover and bake for a further 30 minutes or until the sauce thickens slightly.
  3. Meanwhile, cook the potato in a large saucepan of boiling water for 10 minutes or until tender. Drain and return to the pan. Use a potato masher to mash until smooth. Add the milk and stir until well combined. Season with salt and pepper.
  4. Increase oven temperature to 200°C. Use a fork to spread the mash over the lamb mixture. Combine the parmesan and breadcrumbs in a small bowl. Sprinkle evenly over the mash. Bake for 20 minutes or until golden. Serve.

The hidden side of craft is the amount of excess materials that build up.  
There are also tools necessary to make simple projects, leftover ribbon, thread 
and just those odd bits and bobs that need a home!  
Find some small boxes from a craft shop, paint all the same colour and then stick on labels...
stack on a tray and place on a shelf for easy access...
now I just need to apply this to my overflowing craft cupboard  :)

Mini Mathilda's Makes...


Bean Mosaic

Using thick card, draw a pattern and then paint one area at a time with glue.  
Press on various coloured beans or seeds until the whole surface is covered and your masterpiece is done!!

Mini Mathilda's Bakes...


Strawberry Mascarpone

Wash and hull 2 punnets of strawberries.  Mix together 175g mascarpone flavoured with a little honey or icing sugar, lemon juice and vanilla essence.  Add 1/4 cup grated chocolate.  Divide strawberries into 4 glass bowls and top with mascarpone sprinkled with chopped pistachio.

YUM!

and place some wadding inside then sew over the top 
and around the edges in any pattern you fancy to make your little one a dolly blanket!

Mini Mathilda's Bakes...


I made this for our family last week and it was a HUGE hit with everyone - even the 14 month old!

Mexican Tortilla Stack

8 Tortilla Wraps
1 onion, diced
500g beef mince
1 can Mexican chilli beans
1 pkt taco seasoning
1 jar taco sauce
2 cups tasty cheese, grated
150g sour cream
1 avocado, sliced


Preheat oven to 180C. Heat 1 tsp oil in a large frypan and cook the onion until soft and transparent. Add the mince and cook until browned. Add the taco seasoning and stir until combined.
Grease a pie dish (roughly the same size as the tortilla). Place one tortilla in the bottom of the dish , then layer with 1/2 cup mince, 1/4 cup cheese and a little taco sauce.  Continue layering with the remaining ingredients. Place the final tortilla on top and sprinkle with cheese.
Bake in the oven for approximately 15 minutes, or until golden brown.
Cut into wedges and serve with a dollop of sour cream, a few slices of avocado, 
green salad and the remaining taco sauce.

We couldn't resist showing you this super fun idea!
Gather up a collection of small rocks and spend some time letting your children paint them with funny faces etc (use water soluble paint)...then go for  a walk around your neighbourhood, town or suburb and let them place them in funny places for people to come across unexpectedly!!
It's all about having a bit of fun with art and brightening up someone's day!

Mini Mathilda's Makes...


After a different way to grow fresh herbs?
We love this idea using an old hanging shoe rack...
cut a few holes in the bottom of each pouch, hang on a wall or fence outside,
fill with potting mix and plant herbs of your choice!
