Mini Mathilda's Bakes...


How cute are these little guys!!!
Tempt your toddler or child tonight with one of these tomato heads...
fill a hollow tomato with couscous, risotto, pasta etc...
thinly chopped shallots for hair, sliced olives for eyes 
and cheese shapes for feet and a mouth.
Even the big kids will want one!

Try this fun idea with the kids these holidays...
depending on their ages, draw pictures or write down a treasure hunt 
for them to find.  They can then search the garden and fill up an egg carton each!
You can follow a nature theme, or hide little trinkets around the garden...
have fun!

Mini Mathilda's Bakes...



Good old Macaroni Cheese!

Ingredients

4tbsp butter, plus more for baking dish
salt and pepper
3 cups macaroni
1 1/2 cups evaporated milk
1/3 cup skim milk
2 large eggs
1/2 tspn salt
1/4 tspn garlic powder
450g cheddar cheese, grated
225g mozzarella cheese, grated
Paprika for sprinkling

Directions

Preheat oven to 190.  Butter a 30x20cm baking dish, set aside.  
Bring a large pot of water to the boil, add salt and macaroni.  Cook until al dente.  
Drain and return to pot, add butter and toss until melted through, set aside.
In a medium bowl, whisk together the evaporated milk, skim milk and eggs.  
Add salt, garlic powder, 1 tspn salt and 1/2 tspn pepper, set aside.  
In another medium bowl combine the cheeses, set aside.
Place 1/3 macaroni in an even layer in the bottom of the baking dish, 
cover evenly with 1/3 cheese.  Repeat with remaining macaroni and cheese mixture.  
Pour milk mixture evenly over contents of baking dish, sprinkle with paprika.  
Bake until top layer is lightly browned, 35-40 mins.  
Let stand for 10-15mins before serving.

Perfect for a cold winter's day!

Cook



so it's cold, you're up late working and you need a little decadent pick me up without the time consuming effort! Well I have just the thing for you! How about a divine chocolate mud cake made in less than 5 minutes, right in your coffee cup!

Ready for it!

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.

Pour in the milk and oil and mix well.

Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.

EAT!

Cook


Next time you have a children's birthday cake to create (or an adult for that matter!!)
this rainbow layer cake is just the ticket to many ooooo's and aahhhh's.

I made this one for my son recently and have to admit I cheated and used packet mixes as he has Ceoliac Disease and it was just easier, but you could make yours from scratch if you wish!

The only trick is to go to a cake decorating shop and buy gel food colouring...I bought yellow, blue and red - out of which I made orange, purple and green as well.
Using 3 packet mixes, I made up 1 at a time and divided the mixture in half, added the colour and baked each layer as a thin individual cake.
Once cold, I then assembled using a layer of cream cheese and marscarpone icing inbetween each layer before icing the whole cake with a thin layer of icing...freezing for an hour or so and then finishing off with another layer of icing - this keeps any crumbs in the 1st layer of icing and you look like a pro!

Then all that's left is to decorate the top with rainbow-coloured lollies or 100's and 1000's and see if you can keep a secret until the first slice is cut...

I don't know about you, but lately I've been struggling to keep everything organised at home...
chargers, cords, keys, bills you name it...so I was so excited when I found these tips
- I'll be setting up the shoe organiser tomorrow morning for sure!!

  1. In areas where there are lots of wiring, such as home entertainment centres and offices, label electrical cords at the powerpoint so you can tell which appliance you’re unplugging.
  2. Use a shoe organiser that’s made to hang on the back of doors for storing charging cables, such as mobile phone, camera, kids DS games...the list is endless!
  3. Dividers made for kitchen drawers, particularly systems which allow you to buy individual pieces that stack as well as sit side by side, work equally well in the bathroom for organising make-up.
  4. Pretty vintage toast racks are just the right size for envelopes. Keep mail in one until you’re ready to deal with it, or use for holding bills.
  5. Send someone you love an old fashioned letter by snail mail - it will make their day x
